- 1/4 cup shallots, finely minced
- 1 cup dry white wine
- 3 tbsp lime juice
- 1 cup (2 sticks) butter
- Salt and pepper
Combine shallots, wine, and lime juice in a heavy saucepan over medium heat. Cook until mixture is reduced to about 1/3 cup. Pour through a strainer. Return liquid to saucepan over medium heat.
Whisk in butter, one piece at a time, making sure each piece is melted before adding another. Season with salt and pepper to taste.
