Grilled Poblanos With Stilton and Bermuda Onion

  • 1 large Bermuda onion, cut into 1/2 inch rings
  • 4 poblano chiles, cut into halves, seeded
  • 1 tbsp olive oil
  • 10-12 oz Stilton bleu cheese, sliced


Brush the onion rings and the outside of the chiles lightly with the olive oil. Place the chiles on a grill rack at the edge of the heat source. Grill for 7 to 15 minutes or until soft and pliable.

Place the onion rings on the grill rack and grill until slightly charred. Place an equal amount of the onion rings in each chile half. Arrange the cheese slices over the filled chiles. Place on the grill rack and grill until cheese melts.
