Fingerling Potatoes With Shiitake Mushrooms

  • 2 lbs fingerling potatoes, washed not peeled
  • 1/2 lb Shiitake mushrooms, quartered and stems removed
  • 2 tbsp sea salt
  • 1 shallot, chopped
  • Ground pepper, to taste
  • 3 tbsp butter, unsalted and melted
  • Juives reserved from roast


Fill a large stock pot with water and bring to a boil. Add potatoes. Parboil potatoes until they can be pierced with a skewer or knife. Do not overcook. Drain and chill immediately.

Preheat oven to 375 degrees. Combine all ingredients well and place in a roasting pan. Roast 30-35 minutes, until heated through.

Additional Tips

Select potatoes similar in size for even roasting. Choose from the variety of available fingerling potatoes (e.g., Ruby Crescent, Austrian, Banana, etc.).
