Ingredients

  • 8 heads baby white cauliflower
  • 8 heads baby purple cauliflower
  • 1-2 tbsp sea salt
  • Butter, unsalted
  • Salt and white pepper, to taste

Preparation

Prepare baby vegetables by trimming away outer green leaves. Bring a sauce pan of water to a boil and add salt.

Drop white cauliflower into water. Cook for 2 minutes. Add remaining vegetables.

Boil an additional 2 minutes, or until all are tender. Drain immediately and reduce heat to warm. Cover and hold until ready to serve.

Season with butter, salt, and pepper just before serving.

Additional Tips

Choose cauliflower florets of uniform size for even cooking. The subtle flavor of baby cauliflower is a delightful contrast to a roast.
