Ingredients 1/4 cup butter (1/2 stick) 1 tbsp finely minced shallot 1 tbsp freshly grated lime zest 2 tsp fresh lime juice 1 tsp fresh minced Thai or Serrano chili, including seeds 1/2 tsp salt 4 tilapia fillets, seasoned on both sides with salt and pepper 1 cup flour, seasoned with salt and pepper 2 tbsp vegetable oil Preparation In small bowl mix together butter, shallot, lime zest and juice, chili and salt.
