Ingredients

  • 2 lbs fresh ground beef
  • 8 slices applewood-smoked bacon
  • 4 slices sharp cheddar cheese
  • 3 red onions
  • 4 hamburger buns
  • Cooking oil
  • 1 bottle Hak's Chipotle Bourbon BBQ Sauce
  • Salt and pepper

Preparation

Preheat your oven to 350 degrees. Bake bacon for 20 minutes until crispy and golden (or go ahead and fry ‘em up, if you prefer). Slice the red onions into thin rings and sauté them in cooking oil on medium heat until caramelized, about 20 minutes. I love doing this on the BBQ grill plate, but the stovetop works great too.

Preheat your grill to high heat, approximately 20 minutes. Form four nice half-pound patties and season both sides with salt and pepper. Throw them on the grill. Cook patties for about 2 minutes on each side, and do this two times for medium rare.

While grilling, toast the buns next to the patty. These will toast very quickly, so keep an eye on them. Remove the patties and buns from the grill.

Immediately top the patty with a thick slice of cheese, two strips of bacon, and a healthy pour of Hak’s BBQ sauce. Assemble together with the toasted buns and open wide!
