Moghul Prawns in Coconut Milk

Ingredients

  • 2 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, peeled
  • 1 1/2 tsp curry powder
  • 1 cup coconut milk (not cream of coconut)
  • 1/4 cup mango chutney
  • 1/4 tsp salt
  • 2 lbs prawns, peeled, deveined, tails intact
  • 2 tbsp fresh cilantro, chopped

Preparation

Heat the oil in a large skillet over medium heat. Saute the onion, garlic, and curry powder for 3 to 5 minutes or until onion is tender. Stir in the coconut milk and chutney. Simmer for 10 minutes, stirring occasionally. Stir in the salt. Rinse the prawns and pat dry. Add to the coconut milk mixture. Simmer for 10 minutes, stirring occasionally. Sprinkle with the cilantro. Serve with a chutney of your choice.

Additional Tips

You may substitute scallops or chicken for the prawns.
