- 6 1/2 inch thick boneless pork chops
- 1 clove garlic, minced
- 1/3 cup olive oil
- 1/4 cup fresh lime juice
- 2 tbsp chopped fresh cilantro
- 1/4 tsp red pepper flakes
- 1/4 tsp salt
Bring pork chops to room temperature. Pat them dry to remove excess moisture. Very lightly oil the chops on both sides. Season with salt and pepper to taste.
In a bowl or in your food processor, mix together lime juice, minced garlic, red pepper flakes, and salt. On a low speed or while whisking, add the olive oil in a slow, steady stream. Turn off the processor and gently mix in the cilantro.
Heat the grill to medium-high. Be sure the grill rack is well oiled to avoid sticking. Place the chops directly on the grill. Grill chops with the lid closed on the grill. Turn only once, being sure to cook through, about 7 minutes total. Grill 4 minutes on one side, flip and check it after 2 minutes. Be careful not to overcook the pork.
Allow to cool slightly. Drizzle the lime garlic vinaigrette on the chops as you serve.
