- 3 tbsp lemon vinegar
- 3 cloves garlic, chopped
- 1 shallot, chopped
- 2 tbsp capers, chopped
- 1/2 tsp red chili flakes
- 1 handful fresh mint, chopped
- 1 handful parsley, chopped
- 1 tbsp thyme, chopped
- 9 tbsp Central Market Organics Extra Virgin Olive Oil
- Salt and pepper, to taste
Bring a large pot of salted water to a rolling boil. Add the artichokes and cook until tender. Drain and cut in half and remove the choke. Place in a large bowl.
To prepare the marinade, place the vinegar, garlic, shallot, capers,mint, thyme, parsley and chili flakes in a mixing bowl and whisk. While whisking slowly add the olive oil and whisk until smooth. Season with salt and black pepper. Pour over artichokes. Marinate 30 minutes.
While the artichokes are marinating, prepare the coals. Burn the coals until very hot and you can hold your hand over the grill for no more than 2 seconds. When the coals are ready drain the artichokes well reserving the marinade. Place on the hot grill and grill long enough to mark the artichokes and heat through about 4 minutes. Place back in the marinade and toss well. Serve warm.
