- 1 tbsp butter
- 1 shallot, finely chopped
- 1 1/2 lbs fruits de mer
- 1/2 cup dry white wine (Sauvignon Blanc or Pinot Grigio preferred)
- 1 tbsp thyme, chopped
- 1 cup heavy cream
- Salt and pepper
- 1 tbsp Italian parsley, chopped
Heat butter in sauté pan. Add shallot and garlic and sauté until soft, stirring often.
Add fruits de mer mixture and sauté for 1 minute over high heat, stirring gently. Remove mixture and set aside; add wine and thyme and deglaze the pan.
Reduce the wine to half and then add the cream. Simmer over medium heat and reduce liquid for 2-3 minutes.
Return the fruits de mer to the pan; add salt and pepper to taste. Add parsley; simmer for 1 minute.
