Build-a-Bob Ginger Scallops

  • 12 U/10 scallops
  • 12 green onions, stems
  • 1 lime, quartered
  • 1/4 cup chili oil
  • 1 tbsp freshly grated ginger
  • 1/2 handful fresh basil, chopped
  • 1/2 handful fresh mint, chopped


Rinse and pat scallops dry. Toss scallops, green onion, and ginger in chili oil and let sit for 10 minutes. Place scallops, green onions, and lime on skewers. Season with salt and pepper and grill until scallops are done, about 4 minutes. Remove from skewers and toss scallops and green onions with herbs and the juice of the grilled lime.

Additional Tips

Serve over rice steamed with lemon grass, sauteed bok choy, or a salad of cucumbers and shaved carrots.
