Barramundi With Tomato and Wine Sauce

  • 2 lbs of barramundi fillets
  • 1 medium onion, minced
  • 2 cloves of garlic, minced
  • 2 tbsp of olive oil
  • 1 tbsp of dried basil
  • 1 tbsp of dried oregano
  • 1/4 cup of white wine
  • 1 cup of diced tomatoes, canned or fresh, peeled
  • 2 tbsp of corn starch
  • 1/4 cup of cold water
  • Nonstick cooking spray


Preheat oven to 350 degrees. Sauté onion and garlic in olive oil until onion is translucent. Add white wine, basil, and oregano. Simmer for 1 minute. Add diced tomatoes with juice. Simmer 2 to 3 minutes. Season to taste with salt and white pepper. Mix together the corn starch and cold water. Stir in corn starch mixture to thicken to preferred consistency.

Place fillets on lightly greased baking pan. Cover with tomato mixture. Bake 10-15 minutes, or until barramundi flakes easily.
