Papaya Granita

A granita is a simple, healthy, and refreshing dessert, although it does require some babysitting (stir every 3-4 hours on the hour). Ripe papayas are naturally very sweet, so very little sugar is needed.

  • 1/2 cup sugar
  • 1/2 cup water
  • 5 cups ripe papaya
  • 4 cups passion fruit juice or papaya juice
  • 3/4 cup chilled champagne (optional)


To make the syrup, in a small saucepan, bring sugar and water to a boil. Stir sugar until dissolved and let cool. Set aside.
Cut papayas in half, remove seeds, and peel. Puree papaya with 2 tablespoons of sugar syrup. Stir in fruit juice and optional champagne. Transfer mixture to a shallow baking dish and freeze, stirring and crushing up lumps with a fork every hour. Freeze until mixture is frozen, approximately 3-4 hours. Just before serving, scrape granita with a fork to lighten texture.

Additional Tips

Introduce some whipped cream for a slightly richer version. Serve with whipped cream either as a garnish on top, or create alternate layers of whipped cream and granita.
