Lemon Granita

  • 1 1/4 cups sugar
  • 2 lemons, zested
  • 5 lemons, juiced
  • 2 cups water


Combine 2 Cups water, the suagr, and grated zest in a saucepan over medium heat. Cook carefully until the sugar has melted, but do not let the water come to a boil. Remove from the heat and let cool to room temperature. Strain the cooled syrup and combine with the strained lemon juice. Transfer to an ice tray or metal bowl and freeze for about 3 hours, stirring up the crystals with a fork every 30 minutes or so.
