Tuna Hatch Tartare

  • 1/3 lb sashimi-grade tuna
  • 1 Hatch chile
  • 1/2 tbsp Tabasco mayonnaise
  • 1 1/2 tbsp mayonnaise
  • 1/2 avocado
  • 1 tbsp cilantro
  • 2 tbsp green onions, white part only
  • 1 tbsp chives
  • Juice of 1 lemon
  • Salt and pepper


Roast Hatch chile and allow to cool. In the meantime, dice avocados, cilantro, green onions and chives. Once the Hatch chile has cooled, peel, seed and dice. Chop the tuna into 1/4-inch cubes. In a large bowl, mix chiles, avocados, cilantro, green onions, chives and tuna. Add Tabasco mayonnaise, regular mayonnaise, lemon juice, and salt and pepper. Using a soft spatula, fold the mixture until just blended. Place the bowl in the refrigeratore for 30 minutes to allow the flavors to meld. Using a 1 cup measuring cup as a mold, gently pack the tuna mixture and turn out onto a plate. Garnish with chives.
