Ingredients

  • 16 oz chickpeas canned
  • 6 oz roasted red bell pepper
  • 1 jalapeƱo or Hatch Jack cheese, grated
  • 1 tbsp garlic, chopped
  • 3 tbsp cilantro, chopped
  • 1 tsp paprika
  • 3 tbsp onion, chopped
  • 1 tsp freshly cracked black pepper
  • 1 tbsp chipotle pepper in adobo
  • 1/4 cup extra virgin olive oil, divided
  • Pita bread, toasted

Preparation

Mix all ingredients, except olive oil and pita bread, in food processor until pureed. Slowly add in olive oil. Let set for 1 hour prior to serving. Serve with toasted pita bread.
