Hatched Squash Fritters

  • 2 medium yellow squash
  • 1 cup Hatch chiles
  • 2 eggs
  • 1 tsp garlic salt
  • 1/2 cup onion, chopped
  • 2 tbsp sugar
  • 1/2 cup flour
  • Oil for frying


Grate a squash into a medium mixing bowl. Chop chiles and onions and add to the bowl. Add in the garlic salt, eggs, and sugar. Stir together. Add the flour and cornbread mix. Stir until blended.

Heat a skillet with ½ inch oil until hot and reduce heat to medium. Using a large tablespoon, scoop out a spoonful and carefully drop into the hot oil, flattening slightly to form a fritter, or pancake, shape. Cook on each side until golden brown. Place on paper towels to soak up oil. Serve warm.
