Ingredients

  • 3 1/4 lbs Ripe Tomatoes
  • 1 medium cucumber, chopped
  • 1 small white onion, peeled and chopped
  • 1 medium green bell pepper, de-seeded
  • 1 clove garlic
  • 1/4 cup fine bread crumbs
  • 1 cup water
  • 1/4 cup extra virgin olive oil, divided
  • 1 cup tomato juice
  • 1 tsp granulated white sugar
  • 1/4 cup red wine vinegar
  • Salt and pepper, to taste

Preparation

Place all ingredients in a blender until it reaches the consistency of fine cream.

Chill at least 45 minutes before serving.

Additional Tips

Garnish with chopped tomatoes, bell peppers and parsley. Serve with crusty, rustic bread
