Cool and bubbly float. This Italian delight is traditionally made with white peach puree,a couple drops of raspberry puree for a pink glow and Prosecco. Our version has a peachier flavor and a lightness from the sorbet.

Ingredients
1 ounce Peach Nectar (in a can--like Kern's)
2 small scoops Peach Sorbet
Prosecco
Fresh Peach Slices
Cooking Instructions
For each bellini float:
Pour one ounce of peach nectar into the bottom of a Champagne flute(use a spoon to pour the nectar right into the bottom of the flute not on the sides). Spoon two small scoops of peach sorbet into the flutes and SLOWLY pour in the Prosecco. Garnish with a slice of fresh peach.
Additional Tips
Be sure to pour SLOWLY or the mixture will overflow the glass. You can substitute fresh or frozen peaches that have been pureed and strained for the nectar, and rose Prosecco for the blush.
