Hatch Chile Cheese Fries

 4 - 6 servings

Ingredients

1/4 cup milk
salt to taste
8 ounces Asedero or Muenster cheese, thinly sliced
3 tablespoons water
10 Hatch green chiles, charred, peeled and cut into strips
5 tablespoons vegetable oil
1 package Alexia Julienned Potatoes
1 cup thinly sliced tomatoes
1 1/2 cup thinly sliced white onions

Cooking Instructions

Prepare Alexia Julienned Potatoes according to package instructions.

Heat the oil in a deep skillet and cook the onion over low heat until translucent, about 2 minutes. Add the tomatoes, chile strips and salt to the pan. Cover and cook over medium heat for about 5 minutes. Add milk and water and continue cooking for 3 minutes. Add cheese to the mixture and let it melt. Pour over hot crisp potatoes, and serve immediately.
