Alexia Hatch Browns

Ingredients

1 roasted, peeled and deveined Hatch pepper, diced
salt and pepper to taste
cilantro, chopped for garnish
1 package Alexia Rissole Potatoes with Garden Herbs, thawed
olive oil
1 diced red onion
2 cloves garlic, chopped

Cooking Instructions

In a large skillet over medium high heat, add enough olive oil to coat the bottom of the skillet. Add onion and cook until softened and slightly browned. Add garlic and cook an additional 2 minutes. Add potatoes, cooking and stirring often, until all ingredients are warmed through, about 10 - 15 minutes. Add chile and salt and pepper. Garnish with cilantro and serve.
