Hatch Green Chile Con Papas

Ingredients

2 fresh Hatch green chiles, roasted, peeled and chopped
boiling water
salt to taste
1 tablespoon vegetable oil
4 large potatoes, peeled and diced
2 medium onions, chopped

Cooking Instructions

Sauté onions until tender. Add green chiles. Add diced potatoes and mix thoroughly. Add boiling water to cover, cook down until potatoes are tender and creamy. Cooked potatoes may be used in place of the raw potatoes, but only add a small amount of water to the mixture.
