Dragees and poppers and cubes, oh my! Not to mention bars and pretzels and animal cookies. All this chocolate-covered goodness is an October Foodie Find from Tumbador Chocolate, a small, artisan chocolate shop in Brooklyn.
Jean-François Bonnet, an Executive Pastry Chef in France, and his business partner, Michael Altman, named their company after the Spanish word “tumbar,” to cut down. On Spanish cocao plantations, “tumbadors” are pickers, who begin the confection-making process by picking the highest quality pods. The pods become the excellent chocolate that becomes Tumbador specialties.
Tumbador specialties are all handmade with fresh ingredients for unique flavors.
