This event raises money for charity and kicks off the holiday baking season. Peppermint stands out as a trend this year, and toffee continues its run, along with chocolate, of course. But chocolate is boosted with unusual ingredients such as candied jalapeños, bacon and bourbon. “It’s reflective of how we’re eating now in general,” says David Brawley, executive pastry chef of Princi Italia and a longtime judge of the contest. “Years ago, the contestants used simple, straightforward ingredients. People are more adventurous now, going beyond basics. They’re using more components, not just chocolate, but chocolate with cinnamon, chocolate with chili powder.
