Want a Dash of Roasted Hatch? Reach For This.

A bottle of this sea salt landed on my desk on Monday of this week and I’ve been wondering what to do with it. Well, as it turns out, everything. It has the rich aroma we look for in a smoked sea salt with the exciting zing of our beloved Hatch chile, so obviously grilling comes to mind when we try to create uses, but I discovered something else really exciting today that requires no cooking at all.

We have a talented new Foodie at the Dallas Lovers Lane store, Jeffrey, cooking at Main Station today and I saw him using the salt. Assuming he was seasoning burgers, I walked up to get a taste. Well, he was grilling burgers but he surprised me with a plateful of this amazing dressing he whipped up using only a few ingredients and Chef Milton’s Smoked Atlantic Sea Salt with Genuine Hatch Chiles. I was expecting to sample only a drop on the tip of my finger, but I ended up eating the entire heaping spoonful and wishing I could lick the plate. He really had my number when he told me he’s used Duke’s mayo, a favorite of mine, so I knew I had to share it with you. I never did get around to the burger.
Jeffrey’s Hatch Chile & Avocado Mayo
1 Large Haas Avocado, peeled & cubed
1 c. Duke’s Light Mayo
4 Roasted Mild Hatch Chiles, finely chopped (purchase these already roasted at CM Produce)
1 tbsp. fresh lemon juice
Chef Milton’s Smoked Atlantic Sea Salt with Genuine Hatch Chiles to taste (like you would use salt)

Combine all ingredients in medium bowl and mix thoroughly. Cover & refrigerate for an hour before serving. Keeps up to five days in fridge. Spread on burgers, wraps, sandwiches or use as a topping for any grilled meats and veggies.

I am in the process of producing a brochure showcasing my line of gourmet salts. Would it be alright if I used some of the copy from the Kathleen D. article dated 8/8/13 in my brochure?
