How do you say bacon in Spanish? “Delicious!”

The famous Spanish Ibérico pigs — also called Pata Negra, which translates to black hoof — have roamed the old growth oak forests of the Salamanca and Cordoba mountains in western Spain for hundreds of years, eating wild herbs and acorns. This idyllic setting and regional diet results in the exquisite Jamón Ibérico, a rich, nutty pork meat hailed as the finest in the world.

Pick Poke

L.A. and NYC are wild about poke (POH-kay). A fleet of restaurants with names like Okee Poke and Pokeworks are popping up to serve the traditional Hawaiian fish salad, which is like a deconstructed sushi roll in a bowl. It’s made with large cuts of tuna marinated in soy sauce, sesame oil, sesame seeds and green onions, served along side rice.

Elusive Opah

An enormous silver disc with white speckles, tiny crimson fins and golden eyes, the Opah (Moonfish) is quite a looker — but not often seen. Opah prefer the deep sea and don't swim in eas-to-catch schools, making these elusive fish a seafood prize!

Super, Super Tuscan

So here is the scoop, this is the wine sale, that our wine buyer has been most excited about since last October, when the first details were in just in the works. Gaja (pronounced "guy-uh") Ca'Marcanda Magari is a Super Tuscan blend of Cabernet Sauvignon, Merlot and Cabernet Franc and truly a wine lovers wine.

Keep in mind we only get one shot at this wine each year for a very short period, and every year the inventory of Gaja's Magari Super Tuscan goes as quickly as it arrives.

Citrus Pairings

I love a citrusy Sauvignon Blanc as well as puckery citrus-forward IPAs, but often I have difficulty in deciding what to pair with a beverage so citrus forward, or the other way around, looking for an adult beverage to pair with food that has tart featured front and center. With that in mind, I posed these quandaries to our Dallas Wine and Beer team, and as always, they came back to me with more than enough food (and drink) for thought.
